In order to meet the world's caviar hunger, it is grown increasingly in the farms. The Finnish company Carelian Caviar export the black delicacy to several countries.
Carelian Caviar has been growing sturgeons at Varkaus in Finland since 2006. The first harvest of caviar was taken in 2011.
"We manage the entire process from beginning to end. We milk the mother fish rum, fertilize the eggs with milt from the male fish and raise the fry in culture ponds. When the fish is 5-7 years old, they start producing rum, then caviar. The optimum maturity phase is determined by ultrasound, " said Carelian Caviars production manager Pekka Hannelin.
